Tostadas de Camarón Cocido

Ingredients

  • 2 lbs Shrimp peeled and deveined
  • 2 Cucumbers chopped
  • 4 Tomatoes chopped
  • ¾ cup Red Onion diced
  • 1/2 cup chopped cilantro
  • 2 1/2 tablespoons lime juice
  • Salt & Pepper
  • Tostadas
  • Garnishes
  • Cilantro
  • Serrano Peppers sliced
  • Valentina
  • Avocado sliced
  • Lime wedges

Instructions

  • In a medium-sized saucepan bring about 5 cups of water to a boil. Once the water reaches a boil, add in the shrimp and cook for about 5 minutes until they turn pink. Drain the shrimp and add to a bowl of ice water to cool it completely.
  • Once the shrimp have cooled add them to a large bowl with the cucumbers, tomatoes, onion, and cilantro. Toss withe the lime juice and season with salt and pepper. Top with Serrano Peppers and serve with extra lime wedges and tostadas.
