Atole de Mazapan

Atole de Mazapan

IT’S OFICIALLY ATOLE SEASON!

Which means it is also time to start sleeping with those cobijas your mom bought at the swapmeet with the lion/horse/bull/ zebra on it.

Mine is burgundy with a lion on it and it’s comfy af. Don’t judge, you know you have one too.

For those poor unfortunate souls that aren’t familiar, Atole is a drink made with masa (corn flour) and we  typically have it during the holidays.

If you were like me though, you had it every Sunday after going to church.

I’m not religious, pero my heart was always ready to accept Jesus as our lord and savior if it meant I was gonna have atole, tamales, and one of those gelatinas de leche after mass.

Atole de Mazapan

Atole dates back to pre-Columbian times, and comes from the Nahuatl word ātōlli.

It was a very important part of Mexica culture as Hernán Cortes recounts in the Cartas de Relación, because they basically got most of their daily calories from it.

The Mexica would grind corn into a fine flour, boiled it until it thickened and would flavor it with spices, maguey or chocolate. I’m flavoring mine with Mazapanes because cacahuate and atole go hand in hand.

De la Rosa mazapan is a peanut marzipan candy, that we always tried to unwrap without breaking, but it was always mission impossible. As soon as it broke, it would crumble into a million pieces.

What will you folx be making this Christmas?

Crema Mexicana and Pickled Jalapeño Deviled Eggs

Crema Mexicana and Pickeled Jalapeno Deviled Eggs

I didn’t have my first deviled egg until this year, as a 26-year old man.

I know, but then again, we never had anything that wasn’t Mexican food growing up. I remember I used to complain to my mom that I was tired of always having Mexican food, and would beg her to make something else like spaghetti.

Like, why? I don’t know what I was thinking, pero you can keep the spaghetti.

Billy made deviled eggs for me when he heard I had never had one, and I have to admit, I was hooked. I ate the whole platter.

Perdóname Virgencita but they were good.

If you’re freaking out because tomorrow is Thanksgiving, and you don’t know what to serve as an appetizer, or you were invited over to someones house and you need a plan B because you over baked your cupcakes and now they’re dry af. Don’t fret.

I got you girl.

You can make these cuties with a Mexican twist in less than an hour, and if eggs aren’t your thing, you can still be the cool kid at the party. Grab some Mezcal, some grapefruits, some limes and some ginger beer and make these amazing Grapefruit Mezcal Mules!

Happy Thanksgiving!

Rum Coconut Tres Leches Cake

Rum Coconut Tres Leches Cake

Hey muchachit@s.

This post was originally supposed to go up last Friday, but I’ve been swamped with work and a bunch of freelance projects that I didn’t have time to sit down and write! Last week was Transgender Awareness Week and I want to take a brief moment to talk about it.

Trans Awareness week is a week for trans individuals, nonconforming identities, and allies to bring attention to issues happening in the community. Often times, they are the first to champion for LBTQ+  rights because they don’t have the appropriate resources and fundamental rights they deserve and I think it is time they received some recognition.

Plus they also have Caitlyn Jenner as their unofficial-official spokesperson for the entire community, and we all know how much of a mess that is. They need all the support they can receive!

I’m really happy to see Planned Parenthood is now making Hormone Therapy even more accessible for those who choose to go that route because it is important for them to be able to be comfortable in their skin.

Adrianna’s coloring cook book, A Cozy Coloring Cook Book is officially out and I was so excited to see her include a recipe for Tres Leches because a) it saves me a bunch of recipe testing time and b) knowing Adrianna, I know this cake is going to be amazing.

She was right, this cake is amazing. It’s so light and spongey, not overly sweet, and the whipped topping is so perfect–and were boozing it up because Sandra Lee is my spirit guide #sorrynotsorry.

I was never much of a fan of Tres Leches growing up because Mexican bakeries always used a really gross artificial frosting and it really turned me off. It just tasted like chemicals and food coloring.

If you get the chance, pick up her book and make some of her cozy recipes and color along! You won’t be disappointed.

Wheat-free Mango Doggie Cake

Grain-free Mango Doggie Cake

It’s been a tough week for most of us, and I want to briefly share my grievances with the election.

I was really excited that the election was finally coming to an end Tuesday night because this particular election had felt everlasting, and very draining.  As soon as the AP called the winner, I was in shock.

I woke up Wednesday morning feeling numb, sick, confused, and feeling like someone in the family had passed away. I spent most of the day trying to make sense of it all, how could this have happened?

I tried to stay off social media because I got really fed up with the way some people were addressing the results telling me everything was going to be okay.

Truth is, some of us are really scared of what the future looks like for those of us who have a little more pep in our step, or a little more melanin in our skin.

It might not be okay.

For a few hours, I was taken back to a time when I used to be really ashamed of being brown growing up. I remember I used to scrub my skin so hard wishing it would strip the color right off and I can still remember getting in trouble for speaking Spanish in the playground. I’d go to bed wishing I’d wake up White because I didn’t want to seen as a dirty, uneducated, or poor Mexican.

Unfortunately, this might end up being the same reality for some kids growing up in this presidency and it truly breaks my heart.

I can always find comfort in my dogs whenever I’m feeling a little anxious or having an off day, so it was important for me to recognize them after this turbulent week.

Dogs don’t care whether you’re black, brown, gay or straight. They are always loyal and they’ll give you their unconditional love 100% of the time.

Nomi is a sassy little 2 year old, which is why she’s named after the ICONIC character from “Showgirls”, Nomi Malone. Mose is the opposite. He’s named after cousin Mose from The Office, and he’s an 8 year old that only cares about carbs and sunbathing.

If you have any pets at home, give them an extra tight squeeze tonight and if you have any friends who are women, POC, or belong to the LGBTQ++++++ community, lend an ear and take some time to ask them how they’re doing.
