I can’t believe it’s Valentines Day, I feel like we were just celebrating New Year’s just a few days ago.

I feel like there’s so much to address since last week, but where do we even begin?

We were living 500 miles apart when we first started talking to each other. We’d chat on and off and I thought he was the coolest guy I had ever met. He was funny, incredibly handsome, charming, loved to cook, appreciated art, and had the most beautiful blue-grey eyes I had ever seen.

One weekend, he happened to be visiting San Francisco with some friends (I was living in Fresno at the time), and I jokingly said I’d hang out with him that night since he couldn’t get into the bars yet, and he jokingly agreed. I stewed over wether or not I wanted to make the three hour drive, but after work I rushed home packed some clothes and made my way to SF.

He didn’t think I was being serious, but I made my way to San Francisco that night and we spent the rest of the night walking back and fourth along Pier 39 getting to know each other, and we’ve been together ever since.

Do you want to get married?

¡Por supuesto! But it’s kind of a big expense, so we’re going to wait–there’s no rush!

&

Do you want kids?

YES! YES! YES! If I could, I would have birthed three by now, but that’s not possible, and the odds are against us when it comes to adoption, aaand a surrogate would be too expensive. So we’ll see what the future has in store for us. We’re content with our two dogs for now.

But, enough about us.

Let’s talk about these sliders.

I’ve been having this pulled pork for the past few days for lunch, and I cannot get enough of it!

It’s so juicy and because of the peppers in the mole coloradito, the end product reminds me of birria but a little sweeter. It’s so good!

Because it is a little on the sweet side, we’re balancing our sliders with a crunchy lime slaw.

Make these as an appetizer, or make these as a full-sized sandwich. Make your own rules and be your own bad bitch!

Mole Coloradito Pulled Pork Sliders

Ingredients

  • Sliders
  • 1/3 cup Mole Coloradito
  • 1 tsp Salt
  • 1 tbsp Brown Sugar
  • 1 Garlic clove minced
  • 3 Tablespoons lime juice
  • 2.5 lbs of pork
  • 1 Cup Chicken Stock
  • For the Slaw:
  • 2 cups shredded cabbage
  • 1/2 carrot shredded
  • ¼ cup minced cilantro
  • 1/2 tbsp oregano
  • 1/2 teaspoon kosher salt
  • 4 tablespoons lime juice

Instructions

  • For the Pulled Pork
  • In a large bowl mix together the mole, salt, brown sugar, garlic, and lime juice. Cut the pork into fist sized sized chunks and mix in the sauce to coat. Pour the chicken stock into the bottom of a slow cooker or dutch oven and place the pork on top.
  • Cook your pork in the slow cooker on high for 4-6 hours or if using the dutch oven place the pork in the chicken stock, cover and cook in an oven for 2-2 1/2 hours at 300*F.
  • For the Slaw
  • In a large bowl, toss together the cabbage, carrot, cilantro, oregano and salt. Mix in the lime juice and toss everything again to combine.
  • To assemble
  • Take a spoonful of the pork and place it on the bottom bun, top with a spoonful of slaw. (Note: because the pork is juicy, you don't need to schmear mayo on the buns, but if you love mayo go ahead and do it!)

    These sliders look so fabulous!!! Also, I love hearing stories like that! Being a dog-mom is pretty fun though;)

    Would love to try this, but my partner cannot digest canola oil (which is in the mole starter). The ones in my supermercado have caramel color and other junk. I’m going to ask my friend in El Paso for help – her family is in Ciudad Juarez. This looks amazing.
