Two weeks ago, I harvested the very last passion fruits from my vine, and today, we’re using them to make these pineapple passion fruit mojitos!

Anyways, back to these mojitos! My passion fruit vines had a really great Summer. I’ve had them in my backyard for about three years now, and I didn’t think they would thrive in this awful Fresno heat, but boy was I wrong. The vines were so vigorous! This year, I probably harvested over 100 fruits, and I’d like to think it was due to me hand pollinating every flower!
These pineapple passion fruit mojitos are one of the cocktails I come back to time and time again because they are just so easy to make. I made these for a cooking class I taught recently and thought the recipe deserved to live on here too. I know we’re starting to move into Fall but I love that you can easily swap out the passion fruit pulp/juice for mango nectar or guava nectar or any other fruit juice/ pulp that would make a nice pairing with pineapple. Pineapple Passion Fruit Mojitos
Ingredients
For the Drink
- 2 oz Passion fruit Pulp (or sub with Passion fruit Juice)
- 1 oz Fresh lime juice
- 1 ½ teaspoon Sugar
- 6 Mint leaves
- 2 ½ oz Mango nectar or Pineapple Juice
- 2 oz Silver Rum
- Seltzer
Garnish
- Mint Sprigs
Instructions
- In the bottom of a highball glass, gently muddle the passion fruit pulp, sugar, lime juice and mint leaves. Add the pineapple juice, and rum, then add a handful of ice and top off the glass with cold seltzer, then stir to combine. Garnish with a few sprigs of fresh mint.
