Hola! Today we’re making a spin on the Moscow Mule using mezcal!
If you’ve ever taken a cooking class with me chances are you’ve already made this! I originally developed this recipe for my first book, Chicano Eats, using tequila but I found that using Mezcal gave this cocktail a whole new life. The combination of pineapple juice, fresh lime juice, ginger beer and smokiness from the Mezcal make this cocktail taste just like tepache.

Pineapple Mezcal Mule
Makes 1
Servings 1 Drink

Ingredients
For the Drink
- 3 ounces Pineapple Juice
- 2 ½ ounces Mezcal
- 1 ounce Fresh Lime Juice
- Ginger beer
For Garnish
- Pineapple leaves or wedges
Instructions
- In a cocktail shaker filled with ice, pour in the pineapple juice, mezcal, and fresh lime juice. Shake vigorously for 15 to 20 seconds, then pour the mixture into a highball glass filled with 1 cup ice. Top with your favorite ginger beer, give it a stir, then garnish with a few pineapple leaves or a pineapple wedge.
