Hola! It’s been a while since I’ve last shared a recipe, and boy what a time it has been since!
The super bowl is happening this weekend, so I’m sharing a couple of easy recipes to throw together if you’re hosting, but before I do, I want to catch you up on what I’ve been up to since!
The response to my new cookbook, Chicano Bakes has been amazing! I had the opportunity to go on different podcasts to promote the book, got to promote it on tv, and also had multiple pieces written about the book!! This thrillist piece was my favorite.

Onto the dip! The recipe for this bean dip is very straightforward and it only requires three ingredients; refried beans, enchilada sauce, and Colby Jack cheese. Toss them together, warm in the microwave, and serve! It’s that easy!!

3-Ingredient Bean and Cheese Dip
Ingredients
- 1 ¾ cups Refried Beans (about 1-16 ounce can)
- ½ cup Enchilada Sauce
- 8 ounces Colby Jack Cheese , shredded
Optional: Garnish
- diced onion
- chopped cilantro
Instructions
- In a heat proof bowl, stir the beans and enchilada sauce together then mix in the shredded colby jack cheese.
- Pop the bowl in the microwave for 2-4 minutes, until the cheese is nice and melted.
- Pour the bean dip into a serving bowl, then garnish with chopped onion and cilantro if you'd like, then serve with tortilla chips.

February 6, 2024 at 6:11 amDo you have any favorite brands (enchilada sauce/beans)? My go-to is usually Las Palmas only because that’s what my mom used when she wanted to get dinner on the table quick.

February 6, 2024 at 7:13 pmI usually use Las Palmas or El Pato for sauce too! 🙂 If you’re looking for packaged refried beans, check out Isadora! Their Mayocoba refried beans and their original refried beans are my favorite whenever I’m looking for something quick!
