Today I’m sharing a short recipe for a vegan & dairy-free coconut arroz con leche.
Before you kill me for using vegan and dairy-free in the same sentence as arroz con leche, hear me out for just a sec! It’s actually pretty good! Instead of using regular milk and condensed milk to sweeten the rice pudding we use coconut milk and sweetened condensed coconut milk which are really good alternatives for those of you who are vegan, or have cut dairy out of your diet. This arroz con leche is still just as creamy, warm and spiced, and I promise your abuelita won’t be too upset for skipping out on the dairy.

(Vegan & Dairy Free) Coconut Arroz Con Leche

Ingredients
- 1 Cup Long Grain Rice
- 1 ¾ Cups Water
- 3 Cups Unsweetened Lite Coconut Milk
- 11.25oz Can Coconut Condensed Milk
- 1 Cinnamon Stick (4-5 inch)
- ½ Teaspoon Vanilla Extract
- ¼ Teaspoon Kosher Salt
Instructions
- In a small saucepan under medium heat, add the rice and 1 ¾cups water, then bring to a boil. Once the water has reached a boil, place a lid on the saucepan then reduce the heat to low then and let the rice cook for 12 minutes. After 12 minutes, turn the flame off and let the rice steam for 15 minutes. Once the rice has finished steaming, use a fork to fluff the rice.
- Pour the coconut milk and coconut condensed milk into the saucepan, then add the cinnamon stick and use a rubber spatula to stir in the vanilla extract and kosher salt. Turn your flame on to medium-low, and let it come to a simmer, once it comes to a simmer, let it cook for 8-10 minutes until it starts to thicken. Remove your arroz con leche from the heat and set aside for 20 minutes to cool, the rice pudding will thicken as it cools. Serve warm with a sprinkle of cinnamon.

I had the urge to make it, like my grandma made it for me, but wanted my whole family to enjoy it comfortably . I’m SO happy I found your recipe! It was so creamy, comforting, and perfectly sweetened. I added some raisins to match how my grandma made it years ago.
