Citrus Achiote Grilled Chicken Tacos

I am so excited to be sharing a recipe for grilled citrus achiote chicken tacos! I was really bummed when everything started shutting down because it meant I wouldn’t get to be traveling to Mexico this year. The beautiful thing about food though, is that different flavors and ingredients can instantly transport you to other places around the world with just one bite! 

Since I can’t fly to Cancun this year, this recipe is bringing me a little comfort with all of the flavors that remind me of the Yucatan peninsula. When I think of that area in Mexico, my mind immediately goes to achiote and sour orange. If you’re not familiar with achiote, it is essentially a paste made by grinding annatto seeds along with various other spices—it’s what gives al pastor its bright red hue!

Today I’m partnering with Weber, who gives people all over the world a chance to discover what’s possible on a grill! In 1952 George Stephens went on a mission to create  a grill that lived up to his expectations, so he initially created  a kettle grill from welding two buoys together! These tacos are very easy to make, it all starts with a marinade! For our marinade we blend achiote paste with sour orange juice, cilantro, cumin, garlic, chiles de arbol and olive oil for a mixture that tenderizes the chicken and keeps it juicy and flavorful! Citrus Achiote Grilled Chicken Tacos

Ingredients

For the Marinade

  • 2 lbs boneless skinless chicken breast tenders or thighs
  • 1 cup orange juice
  • 1/2 cup lemon juice
  • 1 tbsp olive oil
  • 6 cloves garlic
  • 3 chiles de arbol
  • 1.75 ounces achiote paste
  • 2 tsp kosher salt
  • 1/4 tsp cumin

To Serve

  • tortillas
  • diced onion
  • diced cilantro
  • minced cilantro
  • salsa
  • lime wedges

Instructions

  • Start by placing the chicken in a zip top bag and set it aside.
  • To a blender add the rest of the ingredients for the marinade and blend on high for 30 seconds or until smooth. Pour the marinade onto the chicken in the bag and massage all of it to make sure all the chicken is covered.
  • Let the chicken marinate for at least an hour or up to 8 hours.When you’re ready to grill the chicken, preheat your grill to mediumhigh. Grill for 3-4 minutes per side for chicken breast  or 4-5minutes for chicken thighs, with the top open, until the chicken has somechar and color on it and the internal temperature has reached 165ºF. Let thechicken rest for 10 minutes before cutting it up and serving with warm corntortillas with your favorite taco fixings.
