One of my favorite things to do in Mexico is grab a torta for breakfast. They’re quick, super affordable and easy to eat while you’re walking around el tianguis. At under $.20 each, eggs are also one of the most affordable sources of high-quality protein so they are a staple in my fridge along with chorizo for when I want an easy and filling breakfast! Breakfast Tortas

Ingredients

  • For the tortas
  • 2 bolillos
  • 1/3 cup refried beans
  • 2/3 cup chorizo cooked
  • 2 fried eggs
  • Toppings
  • sliced white onion
  • sliced avocado
  • salsa

Instructions

  • Directions:
  • Start by slicing your bolillos in half and toasting them until they are a nice golden brown.
  • To assemble the tortas:
  • Schmear a little bit of the refried beans on each half of the bolillo. Add 1/3 cup of the cooked chorizo evenly over the bottom half of the bun, and top with the fried egg. Add your favorite toppings and place the top half of the bun and serve.

    Chorizo and beans together!! YUM! My husband would LOVE this. I am lazy and don’t often make refried beans… and honestly i rarely purchase them either. Is there a store bought brand that you would recommend? I’d love love love to surprise the hubs with these some weekend! He would flip!
